{Gluten-Free Banana Pancakes}
-Living in a small college dorm room that is comparable to the size of a jail cell can be difficult... especially without a kitchen.. oh! and even harder for someone who LOVES food, and love healthy food even more! Seriously though... I have literally spent the past two nights on pinterest into the wee hours of the morning looking at food--mainly roasted vegetables--can you judge me?! YES I LOVE VEGGIES. Honestly there's nothing I love more than roasted brussels sprouts soaked in olive oil and pepper. Before you think I am absolutely crazy, you must know that I have been eating cafeteria style/fast food for the past 3 months of my life. OH! and did I mention I was gluten intolerant? I reached a breaking point with the cafeteria food today and decided to create something of my own in the community kitchen in the basement of my freshman dorm building.
What did I decide to make you ask?
This was purely an experiment... And I got a couple of weird looks from some of the girls downstairs when I told them what I was making.
I used ingredients from the little pantry in my dorm room (which is pretty limited):
- 2 bananas
- 3 eggs
- 3/4 c whole oats
- 2 Tbs. honey
Mash the bananas and then mix everything else in and throw onto the skillet like you would a regular pancake!! If I had had coconut oil I definitely would have cooked them in that!! I will have to try that out the next time I go home.
I finished making the pancakes and ran upstairs to have my roommate taste them... and waited for her response...
SHE LOVED THEM!!!
Personally I think they taste like banana bread!
except a lot easier and faster to make, and in pancake form!!
Who knew eating gluten free could actually be tasty?!
